The two outputs are for different jobs. One can be undone once the AI replies; the other never can, which is exactly what you need in order to hand a document over or publish it.

Every piece of data is replaced with a label and you keep the key file. Paste it into an AI and, when it replies, restore the original data.
Your document redacted, irreversible
The .docx, .pdf or .odt comes back with its layout intact and the data deleted from under the bar. For handing over or publishing, not for an AI.
